Just change the theme. I don't like Human, but there are a few great stock options and a ton of great 3rd party options. Also, if you enjoy the Windows 7 panel, check out Docky for Ubuntu. It can function like Mac's dock or Windows 7's panel(with only a single click to switch between the two).
One of the strong points of Linux is the huge amount of customization available to the end user. Of course, that can also result in weaknesses(less unified feel, bad defaults).

I've refined it more with help from omgubuntu.co.uk. I actually don't keep it the light theme, but I was trying to make it look and feel as much like my brother's Mac as I could(for the fun of it).
